David earned his chops with Gary Danko in San Francisco, then as Executive Chef at the Applewood Inn in Guerneville and for 10 years at Beringer Estate in St, Helena. Chef David is designs and prepares food like a symphony composer. He knows what flavors will enhance and create joy on the palate and further compliment the wonderful wines made at Lynmar. The lunch served today included organic estate greens (7 different varieties), grilled summer vegetables, Red Amaranth crusted breast of chicken, organic and locally procured of course and finished with a delightful buttermilk spice cake covered with strawberry, blueberry and lallaberry coulis. Magnificent.

The tasting hall, with its cool white walls, vaulted ceilings and crystal chandeliers, features paintings of samba dancers and a panorama of Guanabara Bay. Gilles Martin, Sparkling Pointe?s winemaker and master oenologist, explained that owners Tom and Cynthia Rosicki wanted to combine their passion for Champagne with their love of Brazil. The couple founded the winery and brought on French-born Martin as winemaker in 2003.
