Wines To India This is one of my tasting stars of the year. Spicy, dynamic red and black berried fruit (raspberry jam), dark plums, great balance, good weight on the palate, and dry. It sings! Six months in French oak adds spice and certainly the nice mouthfeel. Trivento takes its name from the three winds in Mendoza: Polar, Zonda and Sudestada. The winds define the terroir of Mendoza in the foothills of the Andes. Trivento was founded in 1996 by Vina Concha y Toro. Check out the Argentine section at local wine shops and supermarkets.
Grover Vineyards India Parducci “True Grit” Reserve Cabernet Sauvignon 2010, $30 This is Cabernet to put hair on your chest: robust, earthy, seriously dry. Aromas of carob and cassis infused with oak and smoke greet the nose. In the mouth, flavors are dry and still stitched up tightly, with dusty tannins that coat the mouth. Coffee and chocolate and vanilla lurk in the background. It was aged 18 months, 30% in new French oak, 70% in seasoned French and American oak barrels. True grit pays homage to the immigrant farmers who first planted grapes in California’s Mendocino County in the late 1800s.

To introduce wine-lovers to new things, Paramour certified sommelier Steven Gullo has created a monthly guided-tasting at the restaurant located in the Wayne Hotel.
Wines From India “The main goal is to introduce people to not your run-of-the-mill, common wines, but to introduce them to new, interesting wines that perhaps they normally wouldn’t try,” Gullo said. “There are probably wines they’ve seen or read about, but they didn’t have the confidence in it to buy a bottle or glass, and they end up sticking with what they know. I want them to see what else is out there.” The first tasting will be 6-7 p.m. July 19, and is titled Wines of Summer. Up to 18 guests will gather at Paramour’s private dining table, and for $30, will sample three white wines, one rosé and one red, along with specially-paired culinary offerings.
